Arroz con Leche – Rice Pudding

The best creamy Arroz con Leche your kids are guaranteed to love.

As a child, Laura loved coming home after school to the smell of her mother’s fresh-made Arroz con Leche. Laura especially liked it when her mother added raisins or cut up peaches.

Gluten-Free, Vegan, Vegetarian, Dairy-Free


  • 1 1/2 cups Laura’s Farm Premium Long Grain White Rice
  • 2 cups water
  • 3 cinnamon sticks
  • 3 cups milk or dairy-free alternative
  • 1/2 teaspoon vanilla
  • 1/3 cup maple syrup (or more depending how sweet you want your pudding)
  • 1/4 teaspoon cinnamon (optional – just in case you like that extra bit of cinnamon)


  1. Cook the rice

    • In a large-sized saucepan or dutch oven, bring the rice, water and cinnamon sticks to a boil over high heat. Boil for 8-10 minutes, or until the rice has absorbed the water.
  2. Add milk, vanilla, syrup and boil

    • Remove the cinnamon sticks and stir in the milk, vanilla and syrup. Bring mixture to a boil. Reduce heat to a simmer and simmer for 15-20 minutes. Be sure to stir occasionally and taste test. Add more cinnamon and/or syrup as desired.
    • NOTE: If you prefer your Arroz con Leche a bit more creamy, feel free to add 1/2 or more extra milk.
  3. Serve

    • Serve warm. Can be placed in the refrigerator for a few hours if you would prefer cold pudding.
    • Add raisins or cut up peaches or your favorite fruit for a little extra flavor.
