Black Bean Chicken and Rice

Quick and easy meal to stir up any night of the week.

If you need a quick and easy meal to please the whole family, you have got to give this recipe a try. This is Laura’s go-to recipe for when she needs to pull together a quick meal between the kids’ afterschool activities.

Ingredients

  • 4 bonless skinless chicken breast halves (4 oz each)
  • 1 (15oz) can black beans, rinsed and drained
  • 2 cups cooked, hot Laura’s Farm Premium Long Grain Rice
  • 3 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon pepper
  • 2 teaspoons oil
  • 1 cup frozen corn (optional)
  • 1 cup salsa


Instructions

  1. Season and brown chicken

    • In a small bowl, mix seasonings. Coat both sides of chicken with seasoning mixture. In a large skillet, heat oil over medium heat. Brown chicken on both sides, roughly 3 minutes each side. Don’t worry if the chicken is not fully cooked, it will cook longer with additional ingredients.
  2. Combine ingredients

    • Add beans, corn and salsa to the skillet and cook, covered, for 10-15 minutes or until the chicken is fully cooked. Removed chicken from pan and cut into slices. Add warm rice to skillet and mix with bean and corn mixture. Top with chicken slices.
  3. Serve and enjoy

    • Serve. To add some additional flavor, top with fresh cilantro and/or a dollup of sour cream.
